Chef @th.bro.kia is coming to Ghost, to share with us a special and unique dining experience, a Hāngi. This traditional and ancient Māori technique of cooking in the earth, produces slow cooked textures and earthly smokey flavours.

The food is prepared and wrapped in Banana leaf, where it is placed underground with hot rocks to slow cook over night.

Kia brings a modern twist to traditional Māori cooking methods. Recently named Auckland’s “Outstanding Chef” for 2024, Kia’s culinary journey has seen him working in some of New Zealand’s top restaurants, including Prego, Café Hanoi, Mudbrick, and Pici.
