This August, Baka Ramen lands at Mosto for a kitchen collaboration you can’t miss. Joining Chef Lorenzo De Petris behind the pass is Rafa Joseph, the chef-owner behind Manila’s @baka.rmn and Bar Koji. Rafa has quietly become one of the city’s most exciting chefs, known for his stripped-back approach to cooking that’s built on simplicity, subtraction and balance. At Baka Ramen, Japanese technique meets bold, modern flavours shaped by Manila’s underground dining scene, while Bar Koji has earned a loyal following for its no-frills plates and neighbourhood bar feel.
For one service, Rafa and Lorenzo will cook side by side, bringing together the food they believe in. Mosto’s produce-driven bistro style cooking meets the bold precision of Baka Ramen in a menu that’s less about fusion and more about new flavours, techniques and ingredients.
