This August, Baka Ramen lands at Mosto for a kitchen collaboration you can’t miss. Joining Chef Lorenzo De Petris behind the pass is Rafa Joseph, the chef-owner behind Manila’s @baka.rmn and Bar Koji. Rafa has quietly become one of the city’s most exciting chefs, known for his stripped-back approach to cooking that’s built on simplicity, subtraction and balance. At Baka Ramen, Japanese technique meets bold, modern flavours shaped by Manila’s underground dining scene, while Bar Koji has earned a loyal following for its no-frills plates and neighbourhood bar feel.
For one service, Rafa and Lorenzo will cook side by side, bringing together the food they believe in. Mosto’s produce-driven bistro style cooking meets the bold precision of Baka Ramen in a menu that’s less about fusion and more about new flavours, techniques and ingredients.

MOSTO X MOD KAEW Bangkok’s back in Berawa. We’re doing it again. For the third time, the @modkaewbkk boys are heading back to Mosto, no introductions needed by now. Together, the two kitchens will put together a menu that sits somewhere between Mosto’s no boundary neo bistro cooking and the bold flavours that have made Mod Kaew one of Bangkok’s most talked-about natural wine bars. Familiar ingredients, unexpected combinations and plenty of plates made for the middle of the table. Pablo Padilla, Thomas Pho and Federico Sirito are on wine, pulling bottles from both sides, opening some big ones and bringing a few rarities along for the ride. Two rounds down.
